Cien Culotte by Benoit Delorme represents an atypical Burgundy. It is a full and taut chardonnay, with a straight and immediate sip. Vinification without the use of sulphites with spontaneous fermentation and aging on its lees for 6 months in barrique. Not to be missed, excellent in combination with fish first and second courses, it also goes well with crustaceans and molluscs..

Service

We taste it at a temperature of around 8/10° C. It is recommended to serve it in Tulipano glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Benoit Delorme stops in Côte Chalonnaise after several years of experience in other territories: he moves first to France, from Alsace to Beaujolais, and then to Catalonia, up to a short stay in California to fully understand the wine of the new world. He then returns to Burgundy, in search of the perfect territory for his idea of ​​wine, which he finds in Carcot, a few kilometers from Chalon-Sur-Saone, on the road to Beaune. The production is limited to two wines, a Pinot Noir and a Chardonnay, for a total of a few thousand bottles.
