Vino Bianco - Calogero Caruana

The White Wine of Calogero Caruana is an intense and unique wine that will surprise you starting from its color. The result of a harvest that takes place in two different moments; part of the grapes, that of the youngest vineyard, is harvested and left to ferment and refine in steel with flor formation, the second part ferments with maceration on the skins for about 10 days and refines in used barrels. Intriguing nose that gives notes of yellow fruit, Mediterranean herbs and saloihe notes. In the mouth it is mineral, dry, with a pounding tannic.

Service

It is recommended to serve it at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but with a splendid evolution over the years.

Pairing

Excellent with any meal, aged cheeses, to try with swordfish in sauce.

Calogero Caruana's company is located above the Torre Salsa Reserve, in the province of Agrigento. Calogero is a young winemaker who, after having worked in several wineries, including that of Stefano Amerighi, decides to return to Sicily, to dedicate body and soul to his project. Today it cultivates 2 hectares of vineyards to which 1 of olive groves and 2 of arable land are added. The varieties present are all indigenous such as Grillo, Inzolia, Catarratto and Nero d'Avola. In the vineyard he does not use chemicals and, in the cellar the fermentations take place spontaneously while the refinements are carried out in steel. Calogero's idea is to make an artisanal wine that reflects the characteristics of the soil and the environment and that has in itself the various facets that the different anante bring.
