Non-interventional vinification with separate fermentations, with maceration with the skins for the muscat. Aging for a few months in old barrels. It is not filtered, nor is sulfur added before being bottled.

Service
We recommend tasting it at a temperature of 10/12° in tulip glasses. Wine to be drunk immediately but if left in the cellar for a few years it can give great emotions.
Pairing
Excellent in combination with first courses of fish, seafood and risotto, it also goes well with slightly seasoned cheeses

Sebastien Agelet is a vigneron in Paziols dans l'Aude, 15 km from the sea between Leucate and Perpignan. Like many others before him, Sébastien also came into contact with the world of wine by giving the family grapes to the social cooperative, until he decided to embark himself on that adventure that in a few years would take the name by De Mena. It was 2012 when the company came to life under that name which, in Catalan, means "by nature". For Sébastien it is not possible to go against nature when the desire and desire to make wine are, in a certain sense, visceral. In fact, within a few years, De Mena became one of the revelations in the Languedoc area. Each parcel is processed and cultivated in organic farming. In the cellar the wines are vinified without any kind of addition. The goal is to seek freshness and finesse so that the terroir is well understood in its nature. Today Sebastien produces around eight cuvées including Maccabeu, Lladoner pellut, Cinsalut, Syrah and Carignan. “De mena [de mƸnƏ] is a Catalan term that means“ by nature ”, because it is by nature that I begin to produce wine; Mena can also mean "without the slightest doubt", which I translate with the meaning that working the vine with the aim of producing wine is no longer a doubt for me, it has even become obvious. My great grandfather, grandfather and father worked hard to leave me this wonderful property. Perhaps making wine is the best way to pay homage to them, to thank them ... es de mena! "
