Service
We taste it at a temperature of 10/12° in tulip glasses. Daily wine, but left to rest in the cellar a few years can give beautiful emotions. It is advisable to open it a few minutes before tasting.
Pairings
Excellent in combination with seafood, it goes well with both first and second courses of fish.
Cellar: Tenuta Foresto
Tenuta Foresto is a young and dynamic winery located in Nizza Monferrato, a Piedmontese municipality located in an area of excellence for the production of great wines. The winery is led by Francesco Pozzobon, born in Veneto, who together with his girlfriend produces natural and genuine wines that represent not only the different varietals and terroirs but above all the powerful imprint of nature in viticulture. Its old vineyards are cultivated in a biodynamic regime, and are found on soils of sandy and silty-marly origin. In the vineyards we find a bit of everything, from white grapes like Cortese, Chardonnay and white Moscato, to the red grape variety that best represents this territory expressing inimitable characters, that is the Barbera. Francesco in the cellar tries to intervene as little as possible, with spontaneous fermentation with indigenous yeasts only, maceration on the skins, no filtration before bottling and very low addition of sulphites so as not to alter the purity and taste-olfactory profile of the wines.
