Chablis Le Vendageur Masqué - Domaine De Moor
A Chablis mineral, tense, and absolutely compelling obtained from Chardonnay grapes in purity that come from old vines planted on stony and calcareous soils of Kimméridgien that give the wine notes that gives it notes of flint. Spontaneous alcoholic fermentation in barrique, and aging for at least 12 months in oak barrels then 3 or 4 months in stainless steel tanks. It is bottled without clarification or filtration. Le Bourgogne blanc The Vendageur Masqué is yellow. On the nose you can smell aromas of yellow fruit, notes of butter, minerals and panbriosche. Service
We taste it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but magnificently holds the time.

Excellent as an aperitif, with seafood hors d'oeuvres, vegetables, dry pasta and risotto with fish sauce, to try with a boiled hake.

The De Moor Company is located in the small village of Courgis, in that wonderful region of Chablis. Created by the will of Olivier and Alice De Moor, in 2005 they decided to convert all their vineyards to organic farming, obtaining the Ecocert certification. Their 7 hectares of vineyards are planted mainly with white berried grapes such as Chardonnay, Sauvignon Blanc and Aligoté and extend between the appellations Chablis, Saint-Bris, Bourgogne Aligoté and Chitry. De Moor have become famous because they have given new vigor to this wonderful wine that is Chablis, bringing it back to the genuineness and sincerity of a wine made in an absolutely natural way, without artificial interventions to change the quality of the product to blindly satisfy the most various commercial needs. To do this, they do not use synthetic products in the vineyard, letting the grapes reach full ripeness, which they then harvest manually. In the cellar they do not use selected yeasts, they do not filter, they do not use sulphites and they refine their marvelous wines in wood pies from twelve to sixteen months. Among the wines of the company we mention the Chablis "Le Vendangeur Masqué", "L'Humeur Du Temps", and the "Saint Bris", the Bourgogne Aligotè Plantation 1902 "which is produced with grapes that come from vineyards planted in the very first years of nine hundred, and the "Bourgogne Chitry". The wines of De Moor are sold out very quickly, and there is a very short "season de Moor" in which it is possible to buy their own wines. And just a note on Le Vendangeur Masqué on some of the labels. In the last three or four years, Alice and Olivier have been hit by frost and hail on several occasions that have severely affected their crops. They have therefore been forced to buy grapes from friends in the south, so they have enough wine to survive. The grapes that they buy always come from friends who grow the grapes in an organic and biodynamic way and apply their well-known oenological skills to these grapes. However, in France, if you buy grapes from other producers, you have to do it through a different company - hence the different name!
