Winery: Ronco Severo
The Ronco Severo company is located in Prepotto, in the province of Udine. A place particularly suited to the production of wine in fact, we find ourselves within the denomination Colli orientali del Friuli that borders with Slovenia. Historical company of the area, was the grandfather of Stefano Novello, the current owner, Severo Novello, who is said that as a child had the passion to produce wine, to buy from the noble family Rieppi family to Prepotto, the first land located on a hilly ridge, exceptional for exposure and terrain characteristics. Severo will call this place "Ronco Severo" because it took years of hard work to tear up the terraces to plant the vines. The turning point came when Stefano, with a background in the wine sales sector, decided to change the wine production method and philosophy. Natural wines produced through careful work in the vineyard and in the cellar, so that all its wines can reflect its work and the territory it belongs to. This belief led him to abandon all chemical products and to reduce the intervention in the vineyard and in the cellar to the minimum necessary. In the grassed vineyards, it does not use inorganic fertilizers and herbicides, in the cellar it does not use enzymes, selected and sulphurous yeasts. Only long macerations to extract substances that produce wines with a very intense color, longevity that sometimes are slightly veiled because they do not undergo either filtration or clarification. Stefano cultivates only native vines such as Pinot Grigio, Friulano, Ribolla gialla, Picolit, Refosco del peduncolo rosso and Schioppettino. All vineyards that are located on that wonderful land that is only Friuli called Ponca, able to give extraordinary results.
