Arensbak Sparkling – Arensbak- Il Moralizzatore
Arensbak Sparkling is a low-alcohol (<0.5% ABV) sparkling white proxy, designed for those seeking elegance, depth, and enjoyment, without the alcohol. It is made from Wuniuzao Longjing green tea, processed through a long infusion and natural kombucha-style fermentation. This delicate and vibrant structure is complemented by gooseberry and peach, which lend body and juiciness. During the maturation process, lemongrass and oak are slowly infused, adding aromatic complexity and flavor depth. The entire process takes place at a low temperature to preserve freshness, balance, and finesse. Before bottling, a light addition of CO₂ completes the profile, providing an elegant and measured bubble. In the glass, it opens with notes of ripe peach, gooseberry, and citrus nuances of lemongrass. The palate is velvety and enveloping, yet remains taut and crisp, with a rounded, long, and harmonious finish. The bubble is fine, discreet, and perfectly integrated: it complements the flavor without ever overpowering it. ARENSBAK was founded in 2020 from the vision of Christian Arensbak, together with sommelier Emilie Øst Jacobsen and gastrophysicist Bram Kerkhof. The project has a clear goal: to create a non-alcoholic “wine” experience where complexity, structure, and identity are never compromised. A contemporary beverage designed to align with a lighter, more mindful approach to drinking and personal well-being. ARENSBAK produces a range of proxies made from certified organic raw materials: high-quality teas, fermented in a kombucha-style process, then refermented with fruit and briefly aged through spice infusions. The structure of the beverage comes from the tea, the body from the fruit, and the aerial, aromatic elements from the spices. The result is surprising—drinks that, both on the nose and the palate, evoke the sensations of a well-crafted natural wine. Clear notes of fruit and spice, and a sip where acidity and tannin are perfectly balanced, offering pleasure and genuine gastronomic satisfaction.
