Service
We taste it 8/10° C. It is recommended to serve it in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairings
Excellent as an aperitif, paired with fish starters, main courses of fish, ideal pairing with fois gras tartare.
Winery: Domaine Eric Thill
Domaine Eric Thill was founded in 2009 by Eric and Bérengère Thill, originally from Alsace, in the heart of the Jura region in eastern France between Burgundy and Switzerland, about 45 km from the town of Arbois. Their story is that of a passionate couple who, eager for more opportunities in growing and making wine, moved to the village of Trenal, on the border of the Saône-et-Loire department. Eric and Bérengère brought with them the traditions and winemaking culture of Alsace, immediately adopting sustainable and environmentally friendly agricultural practices. In the vineyard, they follow the dictates of organic farming, choosing not to use synthetic chemicals and to carry out spontaneous fermentations, with very low doses of sulfur dioxide in the cellar. Their organic certification arrived in 2015, issued by Ecocert. The Domaine cultivates approximately 5 hectares of vineyards spread across different areas of the Jura, including: Montbouchon, with clay and limestone soils of Bajocien, Les Grandes Vignes and Les Molates, characterised by grey, red and blue marls, Les Longes Combes, with clay soils.Eric adopts a winemaking philosophy called "parcellaire", that is, he vinifies the fruits of each plot separately, in order to respect their unique characteristics and obtain pure wines that highlight the peculiarities of the terroir. The production focuses on freshness and fruit, aiming to express to the maximum the nature of the vineyards and the character of the native vines such as Chardonnay, Savagnin, Pinot Noir and Poulsard. In short, Domaine Eric Thill represents an example of respect for tradition and the environment, combining organic practices with a winemaking that enhances the diversity and territorial expression of the wines of the Jura.
