The KOI farm is located in Valsamoggia, in the province of Bologna. The name takes its inspiration from Japanese culture, where carp is a symbol of perseverance and non-conformism. It was born in 2018 by the will of Flavio Restani, who after having worked for important Lambrusco producers, decides to produce a sustainable wine with a strong link with the territory. Today Flavio owns about 3.5 hectares of certified organic vineyards with an age ranging from 30 to 50 years of age, cultivated with the breeding technique called "Bellussi", which allows a balanced and uniform development of the plant. This form of farming is almost extinct as it does not allow mechanization. In addition to Lambrusco, Flavio cultivates Trebbiano Modenese, Moscato, Pignoletto and Abana. 4000 bottles per year.
