Service
We taste it at a temperature around 6/8 ° C. Wine to drink immediately but left a few years in the cellar can give great emotions.
Pairings
Ideal as an aperitif, first courses with fish and vegetables, to try with octopus in sauce.
Cellar: Alex Della Vecchia
Alex della Vecchia is a young winemaker who produces natural wines in the province of Belluno. He was born into a family in which the land has been cultivated for generations and the close contact he had with nature since he was a child has led him, over the years, to abandon the commercial sector to regain possession of the farmer's profession, I certainly work. not easy but very satisfying and stimulating. Over the years he has had the opportunity to work with Ernesto Cattel, founder and soul of Costadilà, who was decisive for Alex, both from a human and a working point of view. Alex cultivates local varieties such as pavana, trevisana nera and bianchetta trevigiana and next to these he raises a vineyard of Pinot nero. In the vineyards organic farming techniques are followed, with purely manual interventions of a viticulture respectful of the territory and the environment, and we work in the cellar according to tradition, with the only help of the indigenous yeasts of their grapes, without the addition of sulphites, filtrations or clarifications. Currently Alex carries out 2 projects: Piedecastello, which takes its name from the road that crosses vineyards and gardens in Belluno, about 600 meters above sea level, and Ombretta Agricola
