Follia a Deux by Podere Anima Mund is a wine that comes from Round Leaf grapes with the method of refermentation in the bottle. First spontaneous fermentation in steel with short maceration. Bottled, frozen must from the same vintage is added for re-fermentation.

Service

It is recommended to serve it at a temperature of 8/10 ° in tulip glasses. Although it is a fresh and young wine, it maintains a good attitude to aging. It is advisable to keep it in a cool, damp and dark cellar in a horizontal position.

It is perfectly matched with appetizers in general, vegetable first courses, fish main courses and semi-mature cheeses.

Podere Anima Mundi is a young company from Pisa born thanks to the energetic and gritty Marta Sierota. It covers 17 hectares on the hills of Lari, 4 of which for vineyards and 1 for the olive grove. At the center of the farm the beautiful colonial house, surrounded by typical Mediterranean vegetation, and on the side we find the cellar, the center of production where all the steps of wine production take place, from fermentation to aging. Beyond the house is the nature of nature, where rows of olive trees and vineyards alternate caressed by the sea and crossed by the colors and the typical aromas of the hilly landscape. Marta Sierota works her vineyards exclusively with biodynamic products, following the rhythm of nature and the seasons, because she believes that biodynamics has the possibility of making the wines express the maximum of terroir while preserving the biodiversity of each vineyard. The production is entirely monovitigno with native grapes: Pugnitello, Foglia Tonda, Colorino, Canaiolo and Ciliegiolo.
