Domaine D’Edouard's Crémant de Bourgogne blanc non dosé "Les Collines de Vaux" is a classy bubble with a subtle, creamy mouth, accompanied by a sure minerality. Produced with Chardonnay and Pinot Noir in equal parts. The grapes come from a 1 hectare vineyard with vineyards of an average age of 35 years located in the municipality of Auxerre. Manual harvest and separate vinification: 85% in steel, on the fine lees, and the remaining part barrique for the vins de réserve of the previous year. Minimum refinement of the bases 6 months. Service

Édouard Lepesme, 37, has a respectable curriculum. Agronomist, he then followed oenological studies, while from the Parisian region where he lived he moved to the places of origin of his family, in Yonne, the northern sector of Burgundy.
