Jumpin'juce Sunset comes from an unusual blend in which the Sauvignon remains in contact with the skins for about a month. The nose is fresh with hints of wild strawberries and red flowers. Jumpin'juce is a splendid blend of Cabernet Sauvignon and Sauvignon Blanc. The grapes are vinified partly in ceramic and partly in steel, in whole bunches for the most part destemmed. It is bottled without clarification or filtration. Jumpin'juce is cherry red in color. The nose is fresh with hints of wild strawberries and red flowers. The mouth is vibrant, fruity, fresh, electric and inviting. But it is useless to think of all these things, the bottle will end sooner.
Service
We taste it at a temperature of 12/14 ° in tulip glasses. A wine to be drunk immediately but will express its best in a few years.
Pairing
The Jumpin'juce Sunset is for the whole meal, from an appetizer to a second course of meat, to try with a spaghetti with tomato sauce and pecorino.
Winery: Patrick Sullivan
Patrick Sullivan is one of Australia's most exciting and young winemakers. Patrick was born and raised in Victoria, on the family farm. After traveling to Europe to learn winemaking techniques, he decided to return to Australia and enroll in the oenology course at the local university. Patrick produces his wine from grapes that come from organic and biodynamic vineyards, and in the cellar the interventions are minimal and fermentation and refining take place in steel tanks or ceramic eggs. His philosophy of production is contained in this sentence: "I do not put myself in the category of Natural Wines. I only make wine. Natural Wine is a constructed term that I do not like very much. I make wine in the way I like it and in the style that I like to drink and I do not feel better than someone who acidifies or uses selected yeasts. I do not do it because I do not like it. I do it differently. Four wines produced: haggis Wine produced with Moscato, Pinot Noir, Sauvignon Blanc, Semillon and Malbec grapes, the Bonkers, red wine obtained from 7 varieties of white and red grapes, the Jumpin 'juice obtained from a blende of Pinot Noir and Pinot Gris, and the Windy Cottage from Pinot Noir grapes in purity.
