Jalava by Le Temps des Cerises is a light and delicately fruity red wine based on cinsault, obtained with a 10-day carbonic maceration. The first vintage is from 2018, when Alex, due to problems in the vineyard, decided not to produce some of his cuvées, and with the remaining grapes, he produced a new wine that reflected the season. We taste it at a temperature of 12/14° in tulip glasses. Wine to drink immediately but does not disdain to be aged.

Red wine ideal to accompany all the dishes of the table with fish, to try with sausage and broccoli bucatini.
Winery: Le Temps des Cerises
Le Temps des Cerises is located in La Tour sur Orb, a small town nestled in the forests of the wild Upper Languedoc Regional Nature Park. The company was founded in 2003 by Axel Prüfer, who in 1998, after a camper holiday decided to abandon the former East Germany, where he had grown up, and move to Languedoc to produce wines. Here he meets important figures in the world of natural wines, such as Yan Rohel, Jean-Francois Nicq and Eric Pfifferling. From them he learns how to make wine and above all he becomes an extremist of non-intervention in the vineyard and in the cellar. It cultivates eight and a half hectares of vineyards, divided into Carignan, Grenache, Cinsault, which are found on granite and quartz soils, surrounded by woods, which serve to create a natural barrier for all that its "neighbors" use of synthetic chemistry in their vineyards. All its wines are made with carbonic maceration, without pressing, without selected yeasts, without repassing, or filtration, or clarification, nor adding sulfur. Qulle that comes out are delicious wines that are absolutely enjoyable.
