The Pomerol “Pom 'N' Roll” by Chateau Gombaude-Guillot is a wine that stands out from the wines produced on the right bank of the Gironde. Produced from Merlot grapes from vines over 40 years old planted on sandy and gravelly soils that alternate layers of clay with highly ferrous layers. The harvest is manual and parcel according to the different levels of ripeness of the grapes. Fermentation with indigenous yeasts, pumping over and delestages, malolactic fermentation in thermo-regulated cement tanks. Aging in amphora for 12/15 months A wine that expresses notes of wild berries, cherries, black cherries, light spices and a pleasant trail of undergrowth on the nose. On the palate it is slender, straight and flowing, with a vibrant freshness.

Service

It is advisable to taste it at a temperature of 16/18 ° in Tulip glasses. Wine to drink immediately but will give its best in a few years.

Château Gombaude-Guillot is a family-run business in the heart of the Pomerol plateau, located on the right bank of the Gironde and has always been suited for the production of unforgettable Merlot-based wines. Since 1997 the Château has opted for purely organic cultivation and since 2006 has followed the principles of biodynamics. Olivier, a native of those areas, decides to give a different vision of Bordeaux wine: he decides to cultivate in a way that is more consistent with quality work (yields, quantities, complete exclusion of chemistry-mechanization) and above all gives space to refinement methods (cement, amphora, absence of pumps in the cellar) and styles completely in contrast with the historical way of making wine in those lands.
