Sauro di Aurete is an excellent wine from syrah grapes that grow on clayey-clay soils. Spontaneous fermentation in amphora with maceration on the skins for 6 days with daily punching down. Drawing off and pressing, passage in clayver stoneware with two batonnage at intervals of 15 days in the winter, three months on the lees, racking and aging on the fine lees for 5 months in clayver stoneware. Only 1000 bottles produced.

Service

It is advisable to taste it at a temperature of 16/18° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Pairing

Excellent with cold cuts appetizers, stuffed pasta, meat main courses, to try with a tagliatelle al ragù dish.

The Aurete biodynamic farm was born in 2016 from the passion of three friends for natural artisan wine and from the desire to bring to the fore a territory, that of Esperia (name deriving from the Greek "Hesperos"), with a great wine-growing vocation that sinks its roots in a wonderful area between sea and mountains. The vine has always been cultivated here, a millenary tradition that originates in pre-Roman times and has continued to the present day.
