Thero by Aurete is an excellent white wine from a blend of local white grapes that grow on clayey-clay soils. Spontaneous fermentation in amphora with maceration on the skins for 45 days with daily punching down. Racking, pressing and start of batonnage on a weekly basis for two months, stay on the thick lees for three months, racking and aging on the fine lees for 5 months in Artenova amphora. Only 1000 bottles produced.

Service

It is advisable to taste it at a temperature of 6/8 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Pairing

Excellent with fish appetizers, stuffed pasta, main courses of white meat, to try with a dish of sea cruditè

The Aurete biodynamic farm was born in 2016 from the passion of three friends for natural artisan wine and from the desire to bring to the fore a territory, that of Esperia (name deriving from the Greek "Hesperos"), with a great wine-growing vocation that sinks its roots in a wonderful area between sea and mountains. The vine has always been cultivated here, a millenary tradition that originates in pre-Roman times and has continued to the present day.
