The Priscus is ideal with first courses, second courses of meat, seasoned cheese, to try with the rabbit in the oven.
Cellar: Podere Casaccia
Podere Casaccia is located on the hills of Scandicci, in the province of Florence, surrounded by 12 hectares of woods, olive groves and vineyards. The farm was purchased in 1999 by Roberto Moretti. At the beginning of his adventure, he did not have the conviction of producing wine but only the passion for the earth and the nature that had been transmitted to him by his parents. In time Roberto realizes that the passion he has towards wine and good drink pushes him to try to produce one that reflects his energetic character, and the land from where he is born. Roberto studies and in a short time embraces biodynamic philosophy, the only one that could allow him to combine the tradition of his places with the best agricultural production practices that have the utmost respect for the environment. Its goal is to obtain high quality grapes, resulting from the improvement of the soil structure from which the plant nourishes together with light and other elements, in full harmony with all the surrounding nature. Today, Podere Casaccia has vines with an average age ranging from 40 to 50 years old, consisting of old clones of Sangiovese, Canaiolo, Giacchè, Malvasia Nera, Trebbiano and Malvasia Bianca. Roberto is in charge of all stages of production, from pruning to fertilization through the use of leguminous, cruciferous and biodynamic preparations. For the care of vineyard uses only small amounts of copper and sulfur. Harvesting exclusively manually and in the cellar, vinification occurs spontaneously with only native yeasts. Before bottling the wine is not clarified or filtered. Roberto's desire to discover him has led to the planting of native vines such as the Pugnitello and the Round Leaf from which pure wines will be born. The intent of Podere Casaccia is to produce a quality wine that is mirror of the territory and the mood it does.
