Pinot Noir Stein - Pierre Frick
The Domaine Pierre Frick with its Pinot Nero Stein confirms itself as an indispensable reference point in the Alsatian landscape. The place called Stein, which in German means stone and defines the stony soil of this place, is located at the top of the Bollenberg hill. The name Bollenberg certainly derives from "Belen" or "Belanus", Celtic god of fire in pastoral life. The Bollenberg hill stretches from Rouffach to Issenheim, a few kilometers north of Guebwiller, and enjoys an exceptional climate. The Pinot Noir Stein after a 3-week maceration, refines in 225-liter Burgundy oak barrels for around 18 months. It has a beautiful vivid garnet color. It shows a floral nose, delicate, very free. The mouth is full, juicy, straight, mineral, fruity, defined. A great Pinot noir, in exemplary balance, lymphatic and mature. And moreover, interminable.
Service
We taste the Pinot Noir Stein at a temperature around 16/18 ° C. It is recommended to serve it in tulip glasses. Wine to drink immediately but if left to rest in the cellar for a few years can give great emotions. These natural wines are not stabilized and need to be stored at suitable temperatures that can be guaranteed by a wine cellar, or by a small wine cellar, so as not to jeopardize its durability.
Pairings
Wine that can be paired with white meats, game, pasta dishes, to try with a pigeon stuffed with cherries and chestnut purée.

The Frick family cultivates vineyards in these areas for generations, and today with the last one, Pierre has come to Pierre, and his wife, Chantal, and his son, Thomas, assist in conducting the work. Pioneer of natural wine wines, Pierre Frick has embraced biological philosophy in 1970 to move to biodynamics in 198. The vineyard hectares are 12 divided into 12 parcels, including 3 Grand Cru: Steinert in Pfaffenheim, Vorbourg and Rouffach Eichberg in the village of Eguisheim. In vineyards, biodynamic principles are applied strictly. Forbidden for any herb, the protection of the disease is entrusted to Bordeaux mash and to the weighted use of copper and zinc. Harvest manual with choice of bunches strictly, and in natural winery fermentations, only native yeasts and before bottling the wines are not clarified.
