Winery: Tenuta Ansitz-Dornach - Patrick Uccelli

The Ansitz-Dornach estate is located in Salorno, in the heart of the Adige valley. The estate Ansitz-Dornach was born as a grape donor to cooperatives until in 2008 Patrick Uccelli, vintner and winemaker, wife Karoline, biologists decide to start producing their own wines. Patrick and Karoline carry forward their ideas about nature, which are not just agronomic but also life choices. Patrick Birds practices biodynamics and believes that the task of biodynamics is to unite the different planes in which nature is divided, the mineral from which the plant is raised, governed by forces of substance and form, and by side by side that animal and human one, the only one with a spirit. Patrick produces cornoletame and cornice along with a group of South Tyrolean vineyards, and spreads these substances into a vineyard on foot, avoiding using mechanical means. In the vineyards, grooming is carried out, and small cereals and seeds are grown to obtain animal feed. The vineyards are grown with the classic South Tyrolean vineyards, Pinot Bianco and Pinot Nero, alongside the so-called resistant vines, such as Solaris, Bronner, Regent, Cabernet Blanc. Grape harvesting is manual and is carried out every year by the same people so that they have optimal selection. The wine cellars are spontaneous with refinements in steel tanks, tonneau, barrique and amphorae.
