Producer Tenuta Dornach - Patrick Uccelli

The Ansitz-Dornach estate is located in Salorno, in the heart of the Adige valley The estate Ansitz-Dornach was born as a grape donor to cooperatives until in 2008 Patrick Uccelli, vintner and winemaker, together with his wife, Karoline, decided to start producing their own wines. Patrick and Karoline carry forward their ideas about nature, which are not just agronomic but also life choices. Patrick Birds practices biodynamics, and believes that the task of biodynamics is to unite the different planes in which nature is divided, the mineral from which the plant is grown, governed by forces of substance and form, and by side with that animal and human one, the only one with a spirit. Patrick produces cornoletame and cornice along with a group of South Tyrolean vineyards, and spreads these substances into a vineyard on foot, avoiding using mechanical means. In the vineyards, grooming is carried out, and small cereals and seeds are grown to obtain animal feed. The vineyards are grown with the classic South Tyrolean vineyards, Pinot Bianco and Pinot Nero, alongside the so-called resistant vines, such as Solaris, Bronner, Regent, Cabernet Blanc. Grape harvesting is manual and is carried out every year by the same people so that they have optimal selection. The wine cellars are spontaneous with refinements in steel tanks, tonneau, barrique and amphorae.

Louis 38 Pinot Noir from Tenuta Ansitz-Dornach is a white with a red dress. Red wine fermented on the skins for a few days and aged in large wood. Red fruits, little alcohol, lots of drinking. Served fresh, it goes well with fish, with appetizers in general and with light-hearted meals. Another way of understanding Pinot Noir.

Louis Gewurztraminer42 from Tenuta Ansitz-Dornach is a very vertical version of Gewürztraminer. Fermented and matured in large acacia wood barrels. No opulence, no residual sugar. The right bottle to bring Gewürztraminer back to where it has been missing for too long: to the center of the table.
