Vitoska Origine - Vodopivec
VitovskaOrigine by Vodopivec is a complex and expressive white wine obtained from the vine of the same name, typical of the Karst area. The grapes come from very high density vines, where about half a kilogram of grapes per plant is obtained. Femrnetation takes place with only indigenous yeasts and is macerated together with the skins in large underground terracotta amphorae for 6 months. Subsequently it is aged for about 2 years in oak barrels and then bottled. A perfect synthesis that brings in the bottle, every image and every perfume of the Carso region.
Service
It is advisable to serve Vitoska at a temperature of 10/12 ° in tulip goblets. Wine to drink immediately but left a few years in the cellar can give great emotions.
Pairing
Ideal combined with fish dishes, great with a plate of herbal cjarsons.

The Vodopivec Winery is located in Colludrozza, a small hamlet in the municipality of Sgonico, a few kilometers from Trieste. We are in the Karst, where the stony, clayey soil lashed by the Bora reigns supreme. Since 1997 the winery has been led by the 2 brothers Paolo and Valter, who take over from their parents and decide to devote themselves exclusively to the cultivation of Vitovska. The choice to plant only Vitovska was very courageous at the time because, if in his land it could be considered the indigenous grape variety par excellence, it was practically unknown at national level. In the vineyard all treatments are natural, and each plant produces half a kilogram of grapes. In the cellar the wine is born in the most natural way with spontaneous fermentation and refinement in amphorae purchased by Paolo Vodopivec in Georgia. The Karst that is outside is found in the bottle.
