"Dessous de Table" - Catherine Riss
The Dessous de Table by Catherine Riss is a fresh and thirst-quenching white wine, which on the nose is characterized by a large bouquet of white pulp fruits and floral notes. Delicate and sincere, it moves gracefully in the mouth revealing juice, minerality and great drinkability. The vineyards are grown on predominantly sandy soils, which give finesse and elegance. Obtained from a blend of Pinot Auxerrois and Sylvaner, which come from vineyards located on sandy soils, after manual harvesting, the fruits are taken to the cellar where they ferment spontaneously in exhausted oak barrels. After a period of refinement sur lies the wine is bottled without any type of invasive intervention.
Service
It is advisable to serve it at a temperature of 8/10° in tulip goblets. Daily wine but if left in the cellar a few years can give you great emotions.

Perfect wine throughout the meal, including spicy dishes and aged cheeses.e fish.

The Catherine Riss winery, located in the heart of Alsace, is an authentic expression of the territory and French winemaking tradition. Founded by the talented winemaker Catherine Riss (studies in viticulture in Burgundy, and internship in the company with Jean-Luis Trapet), the winery stands out for its dedication to biodynamic viticulture, respectful of the environment and biodiversity. The vineyards are located around the village of Reichsfeld, and are characterized by two very different types of soil. The plots south of Andlau are characterized by a soil with a predominantly sandy composition, while the others, where the Riesling vineyards and one of the two Pinot Noir, T'as pas du Schiste, are located, are composed of blue schist, very rare in Alsace . Catherine's wines are elegant and complex wines, particularly the Riesling and Pinot Noir, which reflect the purity of the Alsatian terroir. Each bottle is the result of meticulous attention to detail, combining passion, experience and respect for nature.
