Service
We recommend tasting it at a temperature of 8/10 in tulipane goblets. Autochtone is about to swim immediately but will express the best of himself in a few years. In the meantime, it is advisable to keep it in a horizontal position in a fresh, humid and dark cellar.
Pairing
The Resonance fits perfectly with the first dishes with vegetables, fishy seconds, to be tried with a grilled persian fish.

In the heart of the Sologne, in Soings en Sologne, Julien Courtois and his girlfriend Heidi Kuka, created in 1998 their estate nicknamed "Clos de la Bruyere". Julien learned his father's trade as a winemaker and today he cultivates about 4.5 hectares of vineyards composed of vines that are around 40 years old. Julien, like Father Claude, has always respected the principles of producing wines from low yield vineyards, allowing them to reach optimal concentration and working on the basis of natural cycles, working the vineyards manually, and never relying on herbicides or pesticides . In the rows of vines it is easy to find herbs and flowers and numerous insects that are free to roam freely through the vineyards. In the vineyards we find plants of Romorantin, the Menu-Pineau, planted in 1978, which is used to produce the Originel wine, the Gascon, the Cot and a variety of Gamay clones, which grow harmoniously on siliceous soils in red clay . "We produce different wines, natural and rich from the values provided by a healthy winemaking process", explains Julien. "Both in the vineyards and in the cellar, the wines are produced without chemical products, which gives them a unique and unique taste. Julien was able to produce elegant, concentrated and above all sincere wines.
