Pappou by Domaine de Kalathas is a rosé wine, obtained from a blend of Aspro Potamisi, Rozaki, Mavro Potamisi. The grapes come from old vineyards with an average age of 140 years, located on sandy-granite soils. The vinification takes place with co-fermentation of the grapes in stainless steel tanks, without filtration or clarification, and refinement for 10 months on the fine lees in the same containers. Winery: Domaine de Kalathas
Domaine de Kalathas is Jérôme Binda's winery, located on the island of Tinos, within the Cyclades archipelago in Greece. In this setting of granite hills, Mediterranean scrub and sea, Jérôme's project was born twelve years ago, where he now practices the profession of vigneron, after abandoning the city and France. The Domaine has ten hectares divided between vineyards, fruit trees and native plants such as oaks, capers and mastic trees. The land is exposed to the north-east and cultivated according to the principles of agroforestry and permaculture to promote polyculture, traditionally practiced as a source of subsistence on the island. Within this project, the attention paid to the ancient native vines, which are still cultivated ungrafted on the island thanks to the very high sand content within the soil, is of great importance. Among the Cycladic varieties are Aspro Potamisi, Mavro Potamisi, Koumariano, Mandilaria, Rozaki, red and white Aïdani, Asyrtiko, Mavrotragano, Vidiano di Creta. Finally, the famous "creeping" vines typical of the island, grown without supports and capable of sustaining themselves solely thanks to sheep grazing in autumn, are very suggestive. Jérôme, together with his son Gabriel, makes wine with attention and respect for the territory, giving life to wines that share an accentuated salinity and flavor that speak well of the landscape that surrounds them. Mediterranean and fresh wines capable of representing the uniqueness of the island of Tinos.
