The Grado51 Mente di Pistis Sophia is a wine obtained from 100% white grapes, left to macerate for about 3 weeks; then aged for 6 months in chestnut barrels, it is a surprising, incisive and multifaceted wine. Let yourself be conquered, you will not regret it.

Service

We recommend tasting it at a temperature of 8/10° in tulip glasses. Wine to be drunk immediately, but which will give its best in 2/3 years.

Pairing

It is ideal for an aperitif, with fish-based main courses, to try with a stewed San Pietro fish.

The Pistis Sophia winery is located in Ortona, a municipality in the province of Chieti. The choice of the name comes from two main reasons, the first is the meaning of the Greek words Pistis and Sophia or Faith and Knowledge. The winery was founded in 2014 when David Seccia decided to recover his grandfather's lands, 8 hectares of vineyards with olive trees, arable land, and vines. The vines are between 40 and 80 years old, and among the rows we find Trebbiano plants, Montepulciano and Sangiovese. David's philosophy is to produce wines that require the minimum number of human interventions both in the vineyard and in the cellar, without chemical additives and unnatural manipulations. In the vineyard he works respecting the land, the vines and the natural cycles that govern their growth in order to obtain a unique taste in the wines.
