Service
We recommend tasting it at a temperature of 10/12 ° in tulip glasses. Wine to be drunk immediately to be drunk immediately but will express its best in a few years. We recommend keeping it in a horizontal position in a cool, damp and dark cellar.
Pairing
A perfect wine with fish, to try with zucchini lasagna.
Cellar: Les Vins Du Cabanon
Vins du Cabanon is a company located in the Banyuls and Roussillon region. Behind it we find one of the most iconic figures in the region, a true myth for all fans of natural wines, Alain Castex. 30 years in the world of wine, 15 of which spent in his previous company, Le Casot De Mailloles, which he then sold in 2015 to Jordi Perez. Alain kept only one hectare of vines cultivated in Grenache, Syrah, Mourvedre and Carignan, which arise in the sandy-clayey soils of the Trouillas plain, 15 km south of Perpignan. Here he continues to produce his wines for which he has become famous as Canta Mañana, Ezo, Tir à Blanc and Poudre d'Escampette. He refuses to use any wine additive and produces in small volumes, his wines are always been extremely confidential, at most 5000 bottles in the best years. In a word: exciting.
