Gardelin - Klinec

Gardelin is a white wine macerated on the skins obtained from Pinot Grigio grapes. The vineyard extends for just under one hectare, with very low yields that are around 35 quintals / ht. Spontaneous winemaking with 15 days maceration. Aging in traditional acacia, mulberry, wild cherry and oak barrels on fine lees for two to three years. A few months after bottling, the wines are then transferred to steel tanks, in which they settle until they become clear. Only at this point is there a minimum sulphitation to protect the liquid from oxidation. Bottling takes place without filtration and with minimal amounts of added sulphites.

Service

We taste Jakot at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.

Pairing

It goes perfectly with first courses of vegetables, second courses of fish, semi-seasoned cheeses, to try with a baked sea bream with potatoes.

Winery: Klinec

The Klinec winery is located in Dobrovo in the heart of the Slovenian Collio, one kilometer as the crow flies from Italy. Here the view is breathtaking among the snow-covered Alps to the north, the blue in the Adriatic Sea to the south and all around the gentle green hills of the Collio. The winery, which is also a great farm with a wonderful traditional cuisine, is managed by Ales Klinec with his wife Simona's car. Ales is a person of heart and very helpful, a great worker who speaks five languages. The work of his ancestors continues, in fact, the winery was founded by his grandfather in 1918, a period of wars and survival. Here the first line passed and almost all the vineyards were destroyed. After the war a great job has been done to bring everything back as it was before. Today, Ales cultivates five hectares of vineyards planted with native Collio vines, such as Malvasia, Rebula and Friulano, which they call Jakot. But we also find red berry vines like Merlot and Cabernet Sauvignon. In the cellar, Ales tries to intervene as little as possible, only spontaneous vinifications and refinements take place for the whites in acacia and mulberry barrels, for the cherry and oak reds. Klinec wines are delicious, complex, with a strong personality and have all the scents of the collio.
