Jakot - Klinec
The Jakot is an amazing Orange wine, made from Tocai grapes. The grapes come from vineyards located on the hills of Medana, where we find clayey-calcareous soils rich in mineral salts and marine fossils. The fermentation is spontaneous with the only indigenous yeasts and remains in contact with the skins for 10 days. It continues its aging for 24 months in large acacia barrels and 4 months in bottle before release. Jakot is not filtered before being bottled. Intense golden yellow color. On the nose the aromas are intense, with hints of yellow flowers and fruit, hints of marzipan, caramel and salt. On the palate it is warm, enveloping, soft with excellent freshness and flavor, elegant tannins. A wine of great persistence for a wonderful sensory experience. Masterpiece.
Service
We taste Jakot at a temperature of 12/14 ° in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can give great emotions.
Pairing
It goes perfectly with first courses of vegetables, second courses of fish, semi-seasoned cheeses, to try with a baked sea bream with potatoes.

The Klinec winery is located in Dobrovo in the heart of the Slovenian Collio, one kilometer as the crow flies from Italy. Here the view is breathtaking among the snow-covered Alps to the north, the blue in the Adriatic Sea to the south and all around the gentle green hills of the Collio. The winery, which is also a great farm with a wonderful traditional cuisine, is managed by Ales Klinec with his wife Simona's car. Ales is a person of heart and very helpful, a great worker who speaks five languages. The work of his ancestors continues, in fact, the winery was founded by his grandfather in 1918, a period of wars and survival. Here the first line passed and almost all the vineyards were destroyed. After the war a great job has been done to bring everything back as it was before. Today, Ales cultivates five hectares of vineyards planted with native Collio vines, such as Malvasia, Rebula and Friulano, which they call Jakot. But we also find red berry vines like Merlot and Cabernet Sauvignon. In the cellar, Ales tries to intervene as little as possible, only spontaneous vinifications and refinements take place for the whites in acacia and mulberry barrels, for the cherry and oak reds. Klinec wines are delicious, complex, with a strong personality and have all the scents of the collio.
