Assyrtico maison is a white wine macerated on the skins made from Assyrtiko grapes, a native Greek vine. The grapes grow on vines all located in the valley of Mount Paiko, on soils characterized by limestone. Manual harvest of the grapes and spontaneous vinification in steel tanks, with maceration on the skins. The refinement is very particular indeed, half of the wine is aged in steel and the other half in used barrels of Selosse, master of Jason. Ktima Ligas is a small company located in the valleys of Mount Paiko, a stone's throw from Thessaloniki, Macedonia, north of Greece. In fact, the area has a great wine-making tradition, it was here that the Euripides Greek poet wrote and staged his last comedy, Baccanti, and the Church of the Virgin Mary at Panagia Yannitsa was built in 1861 using wine for mix the mortar, because the Ottoman governor had forbidden the use of water for building the church. Ktima Ligas is managed by Thomas Ligas Began who after graduating in oenology in France in 1985 decided to return to Greece to start producing his wine trying to highlight the distinctive qualities of his land. Its vineyards lie on the sunny slopes of Pella and grow on sandy, gravel, lime grounds and are well drained. Thomas decides to conduct his vines naturally so that the vibrant microcosm that grows in harmonious balance in the soil gives the vine nutrients for a balanced development. This approach preserves the original grape characteristics. The varieties of cultivated grapes are all native Greek; Roditis, Assyrtiko, Kydonitsa for whites, and Xinomavro, Limniona for roses. Harvesting takes place manually from the middle of August to the end of September. In the cellar fermentations are spontaneous, with no filtration and clarification, very low amounts of sulphites guarantee a true expression of the single vineyard in that specific vintage. Red wines refine first in oak barrels, then in bottles in their underground basement. The combination of the Pella region and Tenuta Ligas is your guarantee of a quality wine, perfect accompaniment to moments of pleasure.
