Bacen Blanc de Noirs Pas Dosé is a Classic Method sparkling wine made from hand-picked Pinot Noir grapes from the estate's vineyards. Aged for at least 18 months on the lees and an additional 6 months after disgorgement, it expresses elegant notes of wildflowers, rose, blood orange, and grapefruit, enriched with hints of almond, dried fruit, and tobacco. On the palate, it is refined, mineral, and persistent, with a very fine perlage and a long, savory finish.

Bacen Metodo Classico Blanc de Noirs - Soc. Agr. Tiziano Bellini

Bacen takes its name from the ancient dialect name of the majestic drainage pumping station located between San Matteo and Sabbioni, where the winery is now located. It is a Metodo Classico Blanc de Noirs Pas Dosé sparkling wine made exclusively from hand-picked Pinot Noir grapes from the estate's vineyards, an expression of the continuous pursuit of excellence and passion for sparkling wine. Vinification involves soft pressing of the grapes and fermentation at a controlled temperature of 19°C. The secondary fermentation takes place according to the Metodo Classico, with the wine aging in the bottle on the lees for at least 18 months before disgorgement, followed by an additional 6 months of bottle ageing. In the glass, it displays a bright straw yellow color and a very fine and persistent perlage. On the nose, delicate aromas of wildflowers and roses intertwine with fresh citrus notes of blood orange and grapefruit zest. As it ages, elegant notes of almond, dried fruit, and subtle nuances of tobacco emerge. On the palate, Bacen captivates with its refined structure, balance, and extraordinary minerality that extends to a long, clean, and persistent finish. A sparkling wine with great personality, ideal as an aperitif and perfect with raw fish, shellfish, tartare, sushi, oysters, and medium-aged cheeses.

Società Agricola Tiziano Bellini is located in the heart of the Province of Mantua, in a distinctive strip of land bordering the Oglio Natural Park and stretching between the Po River, San Matteo, Sabbioni and the municipality of Viadana, continuing towards the vineyard-covered valley near Sabbioneta. This unique environment benefits from a terroir ideally suited to viticulture and a climate influenced by both Mediterranean and Oceanic conditions, featuring cold winters, bright sunny summers, and mild transitional seasons. From the very beginning, the Bellini family’s winemaking project focused on enhancing the value of the area’s traditional grape varieties, particularly Ancellotta and Grappello Ruberti, which best express the identity and winemaking heritage of this part of Lombardy.
