Wai Rosè – Tenuta Belvedere
The Wai Rosè is an ancestral method that comes from grapes of pure Pinot Noir that come from vines grown on calcareous soils of the Oltrepò Pavese. The vinification is spontaneous with only indigenous yeasts, followed by an aging of 7 months in steel. The refermentation takes place in the bottle according to the Ancestral Method. Refines 6 months in bottle before being put on the market. The Wai Rosè expresses aromas of flowers and small berries, followed by notes of bread. On the palate it is juicy and fresh, satisfying, refreshing, to be uncorked and drink without thoughts.

We taste Wai Rosè at a temperature around 6/8 ° C. Wine to be drunk immediately but left in the cellar for a few years can give great emotions.
Pairings
Ideal with hors d'oeuvres, prime dishes with fish and vegetables, to be tried with an anglerfish in guazzetto.
Cellar: tenuta Belvedere
Tenuta Belvedere is located in Montecalvo Versiggia between the green hills of Pavia. The company was founded in 2013, when Gianluca Cabrini, the current owner, restructures the old winery belonging to his wife. Gianluca previously worked in the automotive sector but pushed for love of his wife and the land leaves his job to devote himself at full capacity to viticulture, despite not having any background as a winemaker. Today it cultivates 10 hectares of vineyards that extend over the hills of the Oltrepò Pavese and enjoy different microclimates capable of enhancing every single variety that is grown. We find native vines such as Croatina, Barbera, and Uva Rara, but also Pinot Grigio Riesling Renano and Pinot Nero, which has found an ideal place here on soils based on clay and limestone of marine origin. In the vineyards there is no trace of chemical fertilizers and other synthetic chemistry products, but the soil is sought to be worked trying to preserve it from run-off and depletion, with organic fertilizations carried out only if necessary before the winter months, spontaneous grassing between the rows and treatments reduced to the single use of copper and sulfur. In the cellar we try to intervene as little as possible so as not to ruin what nature has given. Spontaneous vinification, refining in steel tanks and use of sulphites reduced to the bare minimum. Belvedere estate wines know how to combine the Oltrepò Pavese tradition with the inspiration of Gianluca.ity.
