The grapes come from the Castanet vineyard, located at an altitude of 285 masl on a very stony clay-calcareous soil. Manual harvest, and spontaneous fermentation in the cellar with only indigenous yeasts. Bottling with alcoholic fermentation in progress. Bottled froth. Dégorgement. The Vin de France "D Bulles" is light straw-colored. On the nose it is fresh and fragrant with fresh apple, with a slight spicy undercoat. In the mouth, very bright and united flavors and acidity stand out. Remarkable sapid length, all freshness and fruity clarity.
Service

Winery: Domaine de Brin
The Domaine de Brin is located near the town of Castanet, in the AOC Gaillac. Here, the landscape ripples in rolling hills and the crossing of small villages marks the succession of vineyards and woods, and everything takes on a Tuscan look. The ancient family property is surrounded by oak woods, in a peaceful and preserved environment. Today the Domaine is led by Damien Bonnet who is convinced that the good quality of the wine depends on the health of the vineyard and its surrounding environment. To do this, apply organic methods for the cultivation of its vineyards and in the winery the vinifications are natural, so that the wine can better reflect the terroir, the influence of the climate and the expression of the vines. The cultivated vines are typical of Gaillac, like the Duras, the Braucol and the Prunelart for those with red berries, the Mauzac, the Far from the eye and the Ondenc for the white ones. The vineyards cover 12 hectares, where on the stony grounds the white-berry varieties are cultivated that favor finesse and minerality, while the red-berry varieties are grown on clayey and slightly deeper soils, for better integration into the terroir. The vintages are manual, and the vinifications are spontaneous with refining of the wines in vats or barrels. The clarification of the wines is done simply by gravity. Red wines are not filtered.
