The Valpolicella Classico Superiore DOC of the Aldrighetti Agricultural Company is a wine of great character, representative of the winemaking tradition of Valpolicella. The blend composed mainly of Corvina (65%), Rondinella (30%) and Molinara (5%) helps to create a complex and fascinating aromatic profile. The care taken in production is evident: the harvest is carried out by hand, followed by soft pressing and destemming. Fermentation takes place in steel for a period of 10-12 days, allowing a delicate extraction of the aromatic substances. After racking, the wine ages in steel for at least 12 months, followed by a minimum of 3 months in the bottle, before being marketed. The wine has a ruby ​​red color, with slightly garnet reflections that suggest a certain maturation and complexity. On the nose, it is intense and fruity, with evident hints of cherry, morello cherry and freshly dried plum. These are combined with subtle notes of spices and a minerality that further enriches the olfactory bouquet, making it intriguing and profound. In the mouth, the wine is soft and velvety, with a pleasant flavor that makes the tasting experience harmonious and satisfying. The Aldrighetti farm is located in Marano, on a hill, in the heart of Valpolicella. Historic winery, found documents bring back its birth in the sixteenth century, while the winery in 1930. The management of the winery is familiar, and from father to son for generations has been handed down the love for the land, the knowledge of the territory and tradition to make good wine that in these parts is produced with Corvina, Corvinone and Rondinella. The Aldrighetti family has 4 hectares of vineyards in organic farming, located in one of the best locations in Valpolicella. The grape harvest is carried out exclusively by hand, it is the one used for the production of Amarone and Reciotto is placed in special wooden boxes and dried for a few months in the fruit stand. A Valpolicella and a Valpolicella Ripasso complete the range of wines. The afilosofia degli Aldrighetti is not to enhance their wines with an extreme use of barrique, but to try to express the territory and preserve the typical fruity notes of the vines.
