Boca - Sergio Barbaglia

Boca by Sergio Barbaglia is a full-bodied and intense red wine that comes from Nebbiolo and Vespolina grapes.The harvest takes place manually in boxes around the end of September / early October. The grapes are de-stemmed and pressed and the must obtained is placed in stainless steel containers at 27-28 ° C where they ferment in contact with the skins for about 15 days, with frequent pumping over. It ages for 24 months in oak barrels which makes it a great wine with extraordinary personality.

Service

We taste it at a temperature of 16/18 ° in tulip glasses. Daily wine but, left to rest in the cellar for a few years, it can give beautiful emotions. It is advisable to open it a few minutes before tasting.

Pairings

To drink with tajarin with meat sauce, with boiled meat, to try with a plate of aged cheeses.

The Barbaglia company is located in Cavallirio in the province of Novara, in the pre-Alpine area, at the foot of Monte Rosa, in one of the historic production areas of Nebbiolo called Spanna here. In the cellar we find Sergio Barbaglia, a rigorous winemaker and his daughter Silvia, who adds an expressive spark to precision enology, and the terroir above all. In compliance with traditions and with many manual works, more than 6 hectares of owned vineyards are managed, scattered in neighboring municipalities, between the woods of Cavallirio and Boca and the Cascina del Buonumore, where the typical vines of the territory are fed by a land of porphyritic volcanic matrix, acidic and rich in minerals, qualities that give flavor and freshness to the wines produced. In addition to Boca DOC, wines are made from vinifications in purity of Uva Rara, Croatina, Vespolina and Nebbiolo. For several years now Silvia's love for experimentation has led her to produce two Sparkling Wines Metodo Classico Brut and Dosaggio Zero.
