The "BD'3C Brut Nature champagne by Bourgeois-Diaz is obtained from a cuveè composed of the 3 classic champagne vines; Pinot Meunier, Chardonnay and Pinot Nero, hence the name of the Cuveè 3C champagne. The Metodo Classico Ma Non Troppo is the latest arrive to Tenuta Belvedere. It is a wine that comes from pure Pinot Noir grapes. The grapes come from a 35 year old vineyard with a yield of 70 quintals. Manual harvest at the end of August and a soft pressing in the cellar. Only 30%, i.e. the must, will be fermented spontaneously with only indigenous yeasts in steel tanks. Draft in May and stop on the lees for about 27 months. No addition after disgorging.
