The process takes place with whole bunches, followed by partial fermentation in steel and wood for about 9 months, with subsequent maturation in small woods. Malolactic, carried out to soften the powerful acidity, helps create a complex profile. It is an unfiltered and unclarified wine, which presents notes of citrus such as grapefruit on the attack, followed by hints of pastry and buttery due to aging in wood, giving a denser texture. The balance between the freshness of the citrus and the richness of the pastry makes it versatile: excellent both as an aperitif, even with oysters, and paired with white meats such as chicken.
