Krimiso - Aldo Viola

Krimiso is produced by using Catarratto grapes in purity. The grapes come from old vineyards located on limestone / sandy-clay soils and are harvested in the first decade of October. In the cellar the grapes are dirasped and left to macerate for 150 days in stainless steel containers. For refining it is kept on the yeasts in the same containers for 5 months. Krimiso is bottled without pressing or filtration. Krimiso has golden color. The nose is harmonious and complex with notes of sage, anise and citrus. In the mouth it is enveloping and cool; Characterized by an elegant and distinct minerality, flavor and slight tannicity.

Service

We recommend tasting it at a temperature of 12/14 ° in tulip goblets. Wine to drink immediately but if left in the cellar a few years can give great emotions.

Pairing

Krimiso is indicated for fish dishes, crustaceans and white meats, medium seasoning cheeses, to try with a Sicilian swordfish.
