Vecchie Tonneaux – Monte Maletto
Vecchie Tonneaux di Monte Maletto is a white wine made from 100% White grapes. The harvested grapes are crushed and left in the press for one night before starting the fermentation in steel and finishing it in exhausted tonneaux that are fifteen years old, for a stay with frequent bâtonnages for about a year. This is followed by 4 months of stabilization in the bottle. The malolactic fermentation depends on the vintage. With a fairly deep yellow color, it is a consistent white with aromas of beeswax, citrus and mint. Complex and with an engaging evolution in the glass, on the palate it is tasty and invigorated by a fruity fragrance that closes with a delicious almond note.
Service
Serve it at a temperature of 8/10° in tulip glasses. Great wine for every day. It is advisable to keep it in a cool cellar, damp and dark horizontal.
Pairing
Perfect to accompany substantial first courses, it is excellent to be paired with spaghetti carbonara.

Together, they are part of a Nouvelle Vague of Carema producers, a movement that brings innovation and hope for the future of local viticulture.
