Principino di Istinto Naturale is a white wine with a beautiful aromatic and olfactory complexity, based on 100% Grillo. The grapes are harvested in the first/second ten days of September. Vinification with direct pressing of the whole bunch. Static decantation 12 hours on coarse lees. Spontaneous fermentations from indigenous yeasts. No intervention on the grapes, no addition of sulfur dioxide and other chemical additives. It refines on the noble lees for 8 months then aged in steel vats.

Service

It is recommended to serve it at a temperature of 8/10 ° in tulip glasses. Wine to be drunk immediately but with a splendid evolution over the years.

Pairing

Excellent with any meal, aged cheeses, to try with swordfish in sauce.

Istinto Naturale is a project that was born in 2019 with the idea of ​​working ethically, with vines close to the sea, in order to bring out the essence of radiance, sapidity, the salty air of the Marsala area. The winery is led by Vincenzo Angileri, who grew up with the indelible image of when his grandparents harvested, and in the house the smell of fermenting must reigned, and the taste of the grapes in the vineyards. Today Vincenzo owns several hectares of vineyards, trained according to the local tradition, where the grillo, zibibbo and frappato are the masters. Vincenzo works in the vineyard in a natural way, respecting the traditions. No synthesis, no weeding, trying to eliminate copper and all toxic elements as much as possible from plant control. The vinification takes place with spontaneous fermentations, very short macerations and no chemical intervention. The result is wines of extreme expressive precision, despite a genuine spontaneity and a very authentic style.
