Cellar: Mlečnik
The Mlečnik farm is located on the western side of the Vipava valley, and was founded in 1920 by the energetic Angel, the grandfather of the current owner Valter. The latter joins the company in 1983, and immediately specializes in making quality wines, with the utmost respect for tradition and nature, without ruining the harmony of the substances in the product. Today Valter cultivates 9 hectares of vineyard planted principalmete in Chardonnay, Rebula, Sauvignonasse, Istrian Malvasia, Pinela and Merlot from which it produces an average of 12,000 bottles a year. A few bottles because Valter adopts low yield pruning techniques to allow the vines to be naturally more resistant to diseases and pests. The whole process of wine production, from the cultivation of grapes to vinification, is subject to compliance with all natural processes. All wines are produced with maceration on the skins, with spontaneous fermentation, and without temperature control. The refinements continue in large oak barrels. 3 the wines produced: one Chardonnay, one Sauvignonasse, and the Cuveè Anna fruit of a blend of all white grapes.
