From the clayey soils of Santa Ninfa, Alessandro Viola extracts a pure Grillo that vibrates with saline energy. Vinified spontaneously in stainless steel without fining or filtration, this white wine presents itself in the glass with a genuine cheerfulness. The nose dances between orange blossom and lemon zest, while the palate is direct, agile, and profoundly savory, a faithful reflection of the Trapani terroir. A "naked" and convivial wine, imbued with the light and wind of Sicily.

Alessandro Viola extracts a pure Grillo from the clayey soils of Santa Ninfa and Pietrarenosa, a pure, saline vibration. Made in stainless steel with spontaneous fermentation and bottled early to preserve its energy, this white wine presents itself in the glass with a veiled radiance, a sign of the choice not to filter or clarify, so as not to lose even an ounce of soul. The nose dances with orange blossom, lemon zest, and freshly cut hay, while the palate is direct, agile, and profoundly savory, transporting the palate straight to the Trapani coast. A "naked" wine, with minimal sulfites protecting its frankness, ideal for those seeking a convivial, sincere white wine imbued with Sicilian light.

We taste it at a temperature of 10/12°. Wine to drink immediately but will express its best in a few years.
Pairing
Excellent as an aperitif, it is perfect with a mixed antipasto of fish, first courses of vegetables, to try with linguine with fish.

Alessandro Viola's company is located in Alcamo, in the province of Trapani. Alessandro, a winemaker with various national and European experiences, loves taking care of all the stages of wine production, from the agricultural management of the vineyard to the wine-making operations of the grapes. His philosophy is very simple, making wine using grapes as the only ingredient, this is not only for ethical reasons but for a belief matured over the years that producing pure wine is not only possible but that the result is better. The same approach in agriculture, i.e. making the land independent of fertilizers and herbicides by relying on the natural fertility of the soil capable of renewing itself provided that man does not disturb the balance. "There is a perfect chemical balance in wine, only nature can go so far, who are we to do better than nature?" Alessandro Viola. Today the company includes 7 hectares of vineyards planted with Grillo, Nero D'avola, Nerello Mascalese and Uve Catarratto, most of the vineyards are located in the district of Pietra Rinosa, in the Alcamese hinterland, the remainder on Monte Bonifitato , a mountain overlooking the city of Alcamo. Alessandro Viola gives rise every year to a small niche production, divided into seven labels between white and red, among which stands out a wonderful Pas Dosè Blanc de Blancs based on Catarratto which absorb the energy of the earth, transforming it into unique scents and flavors .
