The Crémant de Limoux AOP by Domaine de Mouscaillo is a refined traditional method sparkling wine born in the heart of the Languedoc-Roussillon, in Roquetaillade, a unique terroir defined by freshness, significant day-to-night temperature variations, and fossil-rich clay-limestone soils. This Crémant perfectly reflects the identity of the estate and the philosophy of the Fort family, focused on expressing the terroir through precise and low-intervention winemaking. Made from a blend of 50% Chardonnay, 40% Pinot Noir, and 10% Chenin Blanc, the Crémant de Limoux Domaine de Mouscaillo combines elegance, mineral tension, and aromatic complexity. The grapes come from approximately 10 hectares of vineyards planted on deep clay and limestone soils capable of retaining moisture even during the hottest summers, ensuring balanced ripening and remarkable natural freshness. Vinification takes place in used 6 hl oak barrels, a choice that preserves purity and aromatic precision without masking the wine’s character. After fermentation, the wine matures for 8 months and then ages for 18 months on the lees before disgorgement, developing depth, creaminess, and exceptional finesse of the bubbles. The zero dosage (0 g/l) further enhances the purity of the fruit, the wine’s verticality, and its vibrant natural acidity. On the nose, it reveals elegant aromas of citrus fruits, green apple, white flowers, and brioche, complemented by mineral nuances and delicate toasted notes. On the palate, it is fresh, vibrant, and precise, with fine persistent bubbles leading to a long, savory, and harmonious finish. Service
We recommend tasting it at a temperature of 10/12° in tulip glasses. Wine to drink immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.

The Domaine de Mouscaillo was born in Roquetaillade, in the heart of the Languedoc, from a long family tradition deeply rooted in viticulture. Pierre Fort and his wife Marie-Claire grew up working in the family vineyards and, after gaining important experience in the Loire Valley alongside renowned vigneron Didier Dagueneau, decided to return to their homeland to highlight the unique terroir of Roquetaillade. In 2004, they took over the family estate, which at the time included only a few hectares planted with Chardonnay and Pinot Noir, including a historic vineyard planted by Pierre himself during his teenage years. Since 2017, the estate has been managed by their son Thomas Fort and his wife Camille, who continue the project with an artisanal and sustainable approach while preserving the authentic identity of the territory. Located between Mediterranean and Atlantic influences and close to the Pyrenees, Roquetaillade is one of the freshest and most distinctive areas of the Languedoc. Strong temperature variations between day and night allow the grapes to retain acidity, elegance, and aromatic precision, while the deep clay-limestone soils, rich in fossils and similar to those of Chablis, naturally preserve water and moisture even during the hottest summers. This exceptional balance gives Domaine de Mouscaillo wines remarkable freshness, pronounced minerality, and refined elegance. The estate’s philosophy is based on a deep respect for the terroir and minimal intervention in the cellar. The goal is to produce healthy, high-quality grapes that allow for authentic, pure, and expressive wines without unnecessary additions. Today, Domaine de Mouscaillo farms around 10 hectares and produces approximately 35,000 bottles per year, with Chardonnay representing the core of the production alongside Mauzac Blanc, Chenin Blanc, and Pinot Noir. Domaine de Mouscaillo wines stand out for their elegance, mineral tension, and precision, representing one of the most refined and exciting expressions of modern Languedoc winemaking.
