Service
We recommend tasting it at a temperature of 6/8° in a flute ballon glass. To be drunk immediately but will express its best in a few years. It is recommended to keep it in a horizontal position in a cool, damp and dark cellar.
Pairing
Excellent wine as an aperitif, with light first courses, with fish-based main courses, to be tried with sea bass tartare flavored with fennel.
Winery: Suriol
The Suriol family has owned vineyards and agricultural land since 1624, 14 generations following one another in this tradition, and clearly the Suriol family also told his Cava expression. It was the father of Assis, Francesc who voted among the first at the end of the 80s for the organic certification of the family property, 24 hectares of vineyards around the hill of the village of Grabuac where they are owners of what used to be defined as the castle of the country. Assis, like his father, continues with this approach, converting all the property into biodynamics, also dedicating himself to the replanting of native varieties, in addition to the classics: Xarello, Macebeu and Prellada, today we also find Sumoll and Monastrell planted on the farm. On the one hand, it is not easy to carry the burden on the shoulders of such an ancient family, but on the other, we notice a great strength in the Suriol family in betting everything on: territory, tradition and biodynamic agriculture. In the cellar the fermentations are carried out in the classic underground cement tanks, and in the sparkling process they are real masters, already seeking in the fruit that balance that transforms into a range of exceptional Brut Natures. There are also some interpretations of still whites and reds, born in local chestnut barrels. Authentic emotions at the foot of Montserrat.
