We taste it at a temperature of 8/10° in baloon flute. The Audace is to swim immediately but will express the best of himself in a few years.

Cellar: Elise Dechannes
Elise Dechannes' Domaine is located in Les Riceys, in the Aube, just an hour and a half's drive north-east of Chablis. Here Elise manages 5 hectares of vineyards divided into 7 parcels on as many different lands. For Elise, Champagne runs in the family: after studying economics in Reims followed by a career in the banking sector, she decided in 2008 to resume use of her childhood land in Riceys. From the beginning of his adventure, the ideas were immediately clear: respect. Of history, of traditions, of the land in which it was born, of those who populate it. And therefore the biodynamic practices, which use all these principles to help the products of the earth express themselves at their best, preserving the richness, biodiversity and healthiness of Les Riceys at every step. As per tradition for an Aube domaine, Pinot Noir reigns supreme: white and rosé vinification, and also in a still version, with the traditional Rosé de Riceys. In some cuvées Meunier and Chardonnay are also present, pure or in blends.
