With this Lambrusco we enter the world of Matteo Verri, a vinous sparkling wine, which comes from a combination of three varieties of Lambrusco where the smoothness and more delicate aromas of the salami play with the coloring intensity and wild streak of the grasparossa. The winemaking takes place with spontaneous fermentation and maceration on the skins for 2 days in fiberglass tanks. Aging in the same containers for 5 months, addition of frozen must and refermentation in the bottle. Excellent for an aperitif or for more complex combinations, a very fresh wine to taste, with character and without frills.
Service
It Serves at a temperature of 6/8 ° in tulip glasses. Wine Berva immediately but left a few years in the cellar can give great emotions.

Cellar: Azienda Agricola Perseveranza
Perseveranza is a young and dynamic company located in Bomporto, a small town a few steps from Modena. At the helm of the company we find Matteo Verri who, after a long work experience in the family garage, decides to engage in a new adventure that brings him closer to the slow rhythms of nature and to working with the earth. The project was born with the planting of a small vineyard of 800 square meters in the winter between 2017 and 2018, followed by a path of experimentation and growth thanks to the purchase of grapes from old winemakers who have maintained a sustainable approach to care of the vineyards. Among these collaborations, the vineyard in the center of Sorbara, capital of Lambrusco, stands out, a vineyard with a century of history that still shows the typical Bellussi architecture in the planting of the vines. As time passes, three rented portions of vineyards are added to the land managed by Perseveranza, old vineyards with ancient genetics, planted respectively in '73, in '60 and in the 40s. But 2023 will be the year in which the company definitively takes shape and structure with the purchase of two proprietary vineyards: divided into one hectare of Salamino and Sorbara vineyards and one and a half hectares of pignoletto. Among the cultivated varieties we find the typical vines of the area and tradition: Lambrusco di Sorbara, Lambrusco Salamino, Pignoletto, Trebbiano Modenese, Trebbiano di Spagna, Montuni, Trebbiano Romagnolo and Lambrusco Grasparossa; grown and vinified with a respectful approach in the field and in the cellar. The wines do not undergo chemical or physical processes, they are not filtered and no sulphites are added, to guarantee a respectful expression of the vineyard and the vintage in the glass.
