Domaine des Roches Neuves' Bulles de Roche is an expressive and mineral sparkling wine that was born and grown in Saumur, in the Loire, obtained from a blend of Chenin Blanc, 95% present, and Cabernet Franc, 5%. The base wine ages in wood used in which previously passes the Insolite It remains on the lees for 18 months. At sight it shows an intense yellow color. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and mineral. It closes with a stretch of finesse that distinguishes Chenin Blanc.

The base wine refines in wood used in which the Insolite previously passes. After assembly it is bottled and refermented in the bottle according to the méthode traditionnelle. It remains on the lees for 18 months. At sight it shows an intense yellow color. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and mineral. It closes with a stretch of finesse that distinguishes Chenin Blanc.
Service
We recommend tasting it at a temperature of 8/10 in tulipane goblets. Saumur Bulles de Roche is about to swim immediately but will express the best of himself in a few years. In the meantime, it is advisable to keep it in a horizontal position in a fresh, humid and dark cellar.
Pairing
The Bulles de roche is perfectly with the first dishes with vegetables, fishy seconds, to be tried with a grilled persian fish.
Cave: Domaine des Roches-Neuves
Domaine des Roches-Neuves is located in Varrains, a small village not far from Saumor, in the center of the Loire. Its foundation dates back to 1850 and is now being carried by Thierry and Philippe Germain who acquired the Domaine in 1993 after searching for parcels from France to Hungary. Domaine des Roches-Neuves is made up of 22 hectares of vineyards, all cultivated under biodynamic conditions, which are found on chalky and tuffy soils. Cultivated vineyards are all indigenous to the Loire as the Chnin Blanc, which perhaps reaches the maximum expression, and the Cabernet Franc. Over the last few years, Thierry has been trying to reduce the alcoholic strength of its wines and to sharpen them as little as possible in wood to get the fruit out, and the result of much work in the glass. Thierry's wines are mineral and elegant, deep and long. Try the "Unusual" Chenin Blanc base and refine the wood.
