The Casa Belfi Vino Rosso is a juicy and fresh wine made from a blend of local red grapes. After the harvest, the grapes are de-stemmed and placed in tanks where they begin to ferment with indigenous yeasts. After at least 30 days of maceration, pressing is carried out, and the must finishes fermentation, partly in stainless steel and partly in amphora. The wine always remains in full tanks, without undergoing any racking up to the bottling memento, always keeping the yeasts in suspension. Spends the winter in a tank outside the cellar to promote tartaric stability with low natural temperatures. The wine is bottled without filtration. All work in the vineyard and in the cellar follows the indications of Maria Thun's biodynamic calendar. It has a ruby red color with fresh aromas and small red fruits on the nose. On the palate it is juicy, with a nice freshness and excellent drinkability.
Service
We taste it to a temperature of around 14/16 ° C. We recommend you serve it in tulip glasses. Wine to be drunk immediately.
Pairings
Wine great accompanied with starters of cured meats, pasta with tomato sauce, ideal pairing with dele stuffed Swiss cheese and ham.

Maurizio Donadi, trained in winemaking, but with great heart and skill, has for some years recovered some family vineyards and has decided to introduce himself to the public with an approach of respect for his work, and love for the land, in order to obtain grapes healthy and energetic, intervening on their wines only to accompany them along the way, without intervening heavily or chemically. His first wine was Casa Belfi Colfondo, which today has grown tired of the denomination and prefers to present himself as naturally sparkling Confondo refermented in the bottle. Maurizio, assisted by his wife Fabiola, conducts continuous research aimed at respecting and improving production for the vineyard, adding and experimenting with various methods, both organic and biodynamic to have a healthy land. Its wine is not sparkling through autoclaves, but is refermented in the bottle without adding yeasts, enzymes or sugars, obtaining a wine with the bottom that remains in the bottle. This is the only way for the grape variety and the soil to best express their peculiarities. A simple concept around which the whole universe of Donadi revolves: biodiversity and natural harmony. Feed the land with infusions, decoctions and herbal teas based on nettle, horsetail, silica and chamomile; make it fertile through the horn-manure, and the harps, which play in the vineyard, releasing their music thanks to the wind, and which harmonize the positive energies and vibrations of the fruits ... And everything resurfaces and harmonises: animals and insects disappeared for decades return - frogs, fireflies, dragonflies, bats.
