Cio Bacaro - Azienda agricola Pialli Alessandro
Cio Bacaro represents the ultimate expression of Tai Rosso, the signature indigenous grape variety of the Colli Berici. Born in the vineyards of Barbarano Vicentino—from 16-year-old vines grown on soils of limestone-marl and stony red clay—this wine combines character and elegance with a profound connection to its terroir. The grapes, hand-harvested in small crates during October, undergo extended skin maceration and spontaneous fermentation using indigenous yeasts. Aging for 18 months in 500-liter French oak barrels, followed by another 12 months in the bottle, imparts complexity, balance, and remarkable aging potential. In the glass, it stands out for its intense bouquet of ripe red fruit, spices, and delicate balsamic notes. On the palate, it is structured, enveloping, and elegant, featuring fine tannins and a long, persistent finish. A Tai Rosso of great personality—ideal paired with red meat, game, braised dishes, roasts, and aged cheeses—it is perfect for those wishing to discover the excellence of the Colli Berici.
Service
It is advisable to serve it at a temperature of 16/18 ° in tulip glasses. A wine that will express its best features in a few years.
Pairing
The Campetti is perfectly matched to the first dishes with tasty sauces, meat, excellent with a hare in the game.
The winery: Azienda agricola Pialli Alessandro
Azienda Agricola Pialli traces its roots back to the winemaking traditions of the 1960s. Both grandfathers—Silvio Tognetti, known as "Cìo Bacaro," and Gregorio Pialli—cultivated small vineyards, personally vinifying and selling their own wine. The varieties grown at the time were primarily Tocai Rosso and Garganega, authentic expressions of the local terroir. Although both men ceased operations in 1999, their passion lived on. In 2001, the next generation took up the legacy, merging the two properties into a single winery and choosing to focus exclusively on producing Tocai Rosso di Barbarano. From the very beginning, all vineyards were converted to organic farming methods, with full respect for the environment and biodiversity. Today, Azienda Agricola Pialli cultivates 4.5 hectares of vineyards and produces between 13,000 and 20,000 bottles annually—depending on the harvest—while maintaining a strong connection to tradition and an unwavering commitment to quality.
