Dosset - Altare Nicholas
Altare's latest label is born from a deep connection to tradition and the desire to continue the legacy of a wine that has accompanied us for years: Ferdinando Principiano's Dosset. A seemingly simple wine, capable of candidly expressing the most authentic soul of the Langhe. Nicholas has long shared this journey, participating in its production and absorbing its most genuine spirit. Two weeks of fermentation on the skins in stainless steel and a brief aging in concrete allow the character of the fruit and terroir to speak unfiltered. In the glass, it expresses itself with the spontaneity of wines of the past: fragrant aromas, hints of crisp fruit, and a sincere, never artificial rusticity, which time in the bottle brings to greater harmony. The sip is agile, vibrant, and juicy, immediately inviting you to the next glass. A wine that is both everyday and special, the guardian of a rural memory that lives on in the present.
Service
It is recommended to taste it to a 16/18° temperature in tulip glasses. Instant wine that can withstand a few years of aging. We recommend to keep it in a horizontal position in a cool cellar, damp and dark.
Pairings
It perfectly combines the first traditional Italian dishes like pasta with tomato sauce or meat sauce, try the risotto with chicken liver.
Cellar: Altare Nicholas
Nicholas Altare represents a new generation of winemakers that combines tradition and innovation. Raised at the court of Ferdinando Principiano, he has developed a deep knowledge of viticulture and winemaking. His decision to bottle for the first time in 2016 is the result of constant commitment and a genuine passion for wine. His 2.5-hectare vineyard, located in the best exposures of Dogliani, in the San Luigi area, benefits from an ideal microclimate and rich soils, which contribute to producing high-quality grapes. Altare dedicates himself carefully to the care of the vines and the selection of the grapes, ensuring that each bottle reflects the unique character of the territory. The three wines he produces are the result of this passion and expertise. Each wine has its own identity, authentically expressing the characteristics of the Dogliani terroir. The pursuit of quality is evident in every sip, making his wines appreciated by both industry experts and simple enthusiasts. With his young age and the wealth of experience he has accumulated, Nicholas Altare is certainly a name to keep an eye on in the Italian wine scene.
